The EMT would be the first to see the extent of his injury and I imagine would be questioned for it in court or least on paper to be presented in court about the nature of his injury. And I imagine there'd be other reports about other findings on what led to that injury, etc.

Right. The EMTs would be the first to see the extent of his injuries. And since they are trained to decide if those injuries are serious enough that the person needs to go to the hospital, and they didn't take him to the hospital, it is pretty safe to say they did not see his injuries as serious.
Yeah, I would say the prosecution has some evidence on how those injuries occurred, because it was stated under oath at the bond hearing that there was evidence that it was not self defense.
