NP. Cajun friend of mine taught me to do that. Boil the duck first and use the stock in the gumbo. Put the meat in just to heat through right at the very end.

Actually, duck gumbo is pretty popular in the south. I've never heard of it any other way. I just wish I could get to try it sometime.

I grew up in Florida and my best friend's father was a shrimper. He had 3 shrimp boats so our family always had lobster, crab, and shrimp on a regular basis.

I prefer crab meat. It's just my preference. Gumbo ... to me anyways ... has to have shrimp or crab, or both in it.

When I make it with duck, I usually use crawfish and shrimp, too. I agree. Gumbo must have seafood in it.:giggle:
 
I love seafood, so I'm taking it there is a good chance I will like Gumbo?

I would love to have some crab legs right about now though. It's been years since I had crab legs. I just wished seafood wasn't so expensive.

If you like seafood, and really bold, spicy flavors, you should love Gumbo.

You're going to have to send me a recipe for really good Gumbo. Does it take a lot of time to make??
 
Crawfish?....ewwww...went to a Crawfish Festival at the beach...can't stand the taste....Remembering that ol' Elvis Presley song "crawfish...crawfish."..(sung in Louisiana when he was making a movie.)....Don't like Gumbo either....:aw:

Left for Las Vegas on Tuesday...was a 5 hour drive. Arrived there, unpacked and rested a bit. Went out looking at the different hotels with my mom, hubby, son, brother and his girlfriend..ended up walking a lot more miles than I expected so I ended up with severe blisters on both of my feet. 2nd day at Vegas, my hubby, mom and I took our son to the Adventure Dome at Circus Circus, then went swimming for a few hours, had dinner with everyone, and then went to Fremont St in the evening. I LOVE the Fremont experience. It looks so much much much better than it did 10 years ago. 3rd day, my hubby took my son to the pool all day while my mom and I went to different hotels to gamble. Then, my mom watched our son while my hubby and I partied on Fremont St. 4th day, had breakfast with everyone before dropping my mom at the airport so she could fly back to Phx while the rest of us drive to the mountains of Northern AZ to stay at my dad's cabin for the weekend. My brother and his girlfriend stopped by the Grand Canyon while my hubby, son, and I went straight to the cabin. It was a 6 hour drive. Got there Friday night...hung out with my dad, step-mom and my other 3 brothers at the cabin.

The next day, we went to beautiful Fossil Creek deep in a valley nearby the cabin. Went swimming and relaxed. Then, headed back to my dad's cabin for more booze and relaxing.

Then, today, my brother, his girlfriend, my dad, and I went to my aunt's cabin further up North off the Rim mountains. It was cold up there! 65 degrees! We went AVTing and riding in the Bobcat off the Rim mountains. Then, we chilled at my aunt's cabin before heading back to my dad's cabin. Then, my hubby, my son, and I drove back to Phx to my mom's house. My brother and his girlfriend stayed at the cabin for another night because they are going to Sedona tmw.

Busy vacation so far and still have this week to go! Loving it!
