The longer you leave it, the softer it becomes. The joke is that if you leave it too long, it will start moving. Several explanations
(1) word play: the softer a cheese is, the more "runny" it is
(2) the smell attracts little creatures who then carry it off
(3) it contains lots of micro-organisms and if you leave them long enough, they evolve legs and it starts to move - after that it evolves into a sentient being and begins to talk, pleading you not to cut a chunk out of it
