I have a lifelong problem with becoming anemic from time to time, and the docs have always tried to get me to eat more red meat! It isn't that I dislike it...I just prefer chicken or seafood. Rice I could eat 3 times a day, lol. Risotto has to be my all time favorite food. I try to use more herbs and aromatics and less salt, and garlic is a staple for me.

I've had a difficult time getting used to seafood because my mother would eat it for a while and then she would get very ill from eating it so we didn't have it very often. I'm trying to cut down my use of red meat due to heart problems. I will be having grilled pork tenderlions this sat.
 
The rest of the week, I will just have chicken twice and tofu twice and then fish twice... and red meat once.
 
that sounds incredibly addicting! I know my boys would do their chores instead of "forgetting" if I made this for them. Stealing your recipe!

Go right ahead. I actually came up with it to keep my son from eating chips and other unhealthy snacks all the time. The thing I love is that you can change it up depending on your taste, or what you have in the pantry.

I am just the opposite. I grew up eating all kinds of fish and seafood. We were also big vegetable eaters. It isn't unusual for me to go without meat.
Grocery shopping tomorrow...pork tenderloins sound good!:giggle:

Well the good thing for me is that I've never been big on eating meat so I rarely eat meat for breakfast or lunch.

Tomorrow I decided I would add 1/2 c. of blueberries in my plain greek yogurt and throw in some walnuts for texture and have toast with hummus with a glass of milk. It's not typical of me to have fruit for breakfast but I'm trying to include more fruit in my menu. Lunch is nearly always some type of salad and sandwich or soup and salad or even soup and sandwich.

Yeah, I eat a lot of salads this time of year, too. I even love to do veggie sandwiches when all the fresh veggies are in season, and non-traditional type salads. Soups are a big staple in my diet in the winter, but I kind of get away from the hearty soups in the warmer weather.
 
Well - tonight I will be having a ground beef throw-together with 2 cloves of garlic, ground beef, canned stewed tomatoes, pureed, canned diced tomatoes, canned mushrooms stem & pieces, 1 medium onion coarsely chopped and I think we will go Italian, so it will be pasta elbows and Italian seasonings.

We are having Chinese for lunch. Chicken chow-mein.

I normally just have gazpacho soup in the summer. I like it better with cooked veggies though it's normally made with raw veggies. No cooking is needed on those hot days!

I don't like cucumbers so I usually have it sans cukes!
 
I will be having braised chicken legs with carrots, onions, smashed potatoes and milk.
 
Tofu with Thai red curry with peppers, bamboo shoots, onions, tomatoes over rice with milk.
 
We had a salad with chicken, strawberries , grapes and melon on mixed greens.
 
We had pork chops, white rice and green beans.
 
Pasta with olive oil, few herbs, and garlic thrown in... And a nice glass of pinot noir to compliment it, wish it was with a juicy steak though.
 
Baked wild salmon with lemon juice, rosemary, capers, shallots, olive oil, rice and salad with milk.
 
Smoked Italian sausage with fried mushrooms, squash, cherry tomatoes, carrots, and green onions mixed with wheat penne/Italian sausage sauce.

I tend to eat a banana for breakfast. Hope that's healthy! :lol:
 
Boiled cabbage with butter, salt and pepper. :drool:
