Red Lobster with friends tonight....
 
Wasn't sure what to do with left over chicken, veggies so I decided to cook up some rice and use some golden mushroom soup that I have on hand to go with my chicken. I'm having green peppers, onions, garlic, dark meat chicken, sun dried tomatoes, mushrooms with my golden mushroom soup with rice and milk.
 
My skillet had a cultural identity crisis. I did a ground beef throw-together that was like Spanish rice, but I use Italian seasonings and Vegan mozzarella cheese then we had Cuban bread on the side.

MIL took me to Applebees after her hair appointment that took forever. I had a new dish for our area I guess. It's not on the online menu. It was shrimp, and Asian vegetable served over white rice with a sweet and spicy sauce.
 
We had homemade pizza. Took me most of the morning to make a new batch of sauce and pizza bases, make up the pizza and put it in the oven only for the whole pizza to be gone within seconds. My little son, when he heard I was making pizza, gave me a big kiss on the cheek. "Thank you Mum, I love you, your pizza is the best in the whole world!" That just tops the cake doesn't it?! Love being a Mum. It made my day.
 
I made pot roast and veggies with dinner rolls for the family. MIL joined us and said it was better than hers ever was. Yahoo!!!
 
I'm having left overs tonight. But may never get to them because I am eating the best and easiest sweet/ salty snack mix ever!

You need:
1 bag popped microwave popcorn
handful or 2 of dry roasted peanuts, mixed nuts, or anything you prefer
handful of dark raisins
handful of dried cranberries (or any other dried fruit you like)

Put all in a bowl. In saucepan, bring 1/2 cup sugar and 1/2 cup light corn syrup to a boil over low heat. Remove from heat and stir in 1/2 cup peanut butter (or Nutella chocolate hazelnut spread) and 1 teaspoon vanilla. Pour over ingredients in bowl and mix well. Spead on cookie sheet and bake 5-10 minutes at 325 until coating is somewhat dry. Cool and enjoy!

This stuff is addicting. The one I'm eating now has popcorn, cranberries, pecans, peanuts, apricots, and the Nutella spread!

Tonight we had Italian turkey sausage, pasta, corn and fresh fruit (strawberries, blueberries, raspberries and blackberries)
 
I had a light dinner. I had navy bean soup with veggies and salad with milk for dinner.
 
Homemade and homegrown vegetable soup. The okra turned out well this year, I planted it over the septic tank. Gotta remember to plant my tomatoes over the septic tank for next year.

Cabbage, tomatoes, okra, yellow squash, red onions, green beans, bell peppers, cucumbers, carrots, celery, tomato juice, liquid beef broth, lemon soup mix and a honey baked ham bone for flavor.

Mine too! Just about every food that I cook for me except some breakfast foods have garlic in it! I love chicken and rice too.

I have a lifelong problem with becoming anemic from time to time, and the docs have always tried to get me to eat more red meat! It isn't that I dislike it...I just prefer chicken or seafood. Rice I could eat 3 times a day, lol. Risotto has to be my all time favorite food. I try to use more herbs and aromatics and less salt, and garlic is a staple for me.
 
I go through about 2-3 heads of garlic a week.

that sounds incredibly addicting! I know my boys would do their chores instead of "forgetting" if I made this for them. Stealing your recipe!
