MizzDeaf is going to make some spaghetti pie over the weekend cuz i asked her to LOL -- we were talking abt what to put together and shes challenged me to make something with the wok thingie and im going to give it a shot *prays i do ok* :lol: cuz i tend to use the good ol' reliable nuker in the kitchen to put something together :rofl:

thanks for ur luck in my first shot on using the wok thingie to attempt to put together some chinese dish hehe -- ill post again when i have made it and how i would rate my cooking :rofl:

a tidbit: i tend to burn food :-x

LOL! you wont burn food if you just concentrate on it..What i do is, use the Timer! my husband and i like to cook and we always use the timer, that way we dont burn the food. Yeah, you let us know how you do with your chinese dish in that wok thang! ;)
 
Sour Cream Chicken Enchiladas

12 flour tortillas at room temp
4 oz Mozzarella cheese
2 cooked chicken breasts cubed

Sauce
2 cans cream of chicken soup
8 oz plain yogurt
1 can chopped green chilies
Salt and pepper

Put a small amount of sauce and chicken and cheese in each tortilla and roll. Arrange in dish cover with remaining cheese and sauce. Bake 25-30 min on 350








Beef Enchiladas

1 lb ground beef
1 finely chopped onion
1 cans Enchilada sauce
2 can tomato sauce -7 oz size
12 flour tortillas
4oz shredded cheddar

Brown hamb meat and onions and drain. In separate bowl mix enchilada sauce and tomato sauce thoroughly spray Pam in a long cake pan. Put 2 tbsp meat/onion mixture and 1 tbsp cheese in tortilla. Roll and put upside down in pan close together put remaining meat and cheese on top and pour sauce over enchiladas. Cover with foil and cook 25-30 min or until cheese is bubbly at 350.

ohhh Soonersfan!!! they sound so GOOD!!!!!! ill definately try those recipes as they sound pretty simple to put together! :thumb:

i did the wok and it came out pretty good to my surprise! :thumb: :D

Perfect !!! :mrgreen: Million thanks for puttin' your recipes here at my request from another thread under "Tortilla". Chicken Enchilada sounds perfect for me and I am goin' to make some for supper today...only for mahself ! :P (hehehe) Unfortunately, I don't like beef. Turkey and chicken are great for me to eat sometimes.

You can always put ground turky instead of hamburger meat :thumb:

yes with those cheeses are generally what we are familiar with -- someone who i have no respect for anymore and MizzDeaf knows her as well has made it several years ago and i tried it the first time and i thought it was very good!

Indian Prawn Rice

25g butter
1 large onion, peeled & chopped
3 celery sticks, trimmed & thinly sliced
75-100g button mushrooms wiped & sliced
100g longßgrain rice
1-2 teaspoons curry powder
450ml chicken stock
50g sliced cooked ham, cut into strips
100g peeled prawns
75g foryen peas or sweetcorn
salt & pepper

1. Melt the butter in a saucepan. Add the onion, celery & mushrooms & fry over a gentle heat for 5 mins.

2. Add the rice & curry powder & fry for a further 2 mins, stirring constantly.

3. Stir in the stock & bring to the boil, stirring. Cover / simmer gently for 15 mins.

4. Stir in the ham, prawns & peas or sweetcorn, cover & cook for a further 10 mins. until the liquid is absorbed. Fluff up with a fork & season to taste with salt & pepper. Turn into a warmed serving dish & served hot.

Makes: 16 cakes

You will need:
8oz/225g self raising flour
1 tsp. baking powder
4oz/100g butter or margarine cut into small pieces
4oz/100g soft brown sugar
4oz/100g chocolate bits or chopped cooking chocolate
1 egg
milk to mix

1. Grease 1 large or 2 smaller baking trys & put them to one side. Weigh out the flour, measure the baking powder & sieve them into a mixing bowl. Add the butter. Check that your hands are clean, then rub butter into the flour, using the tips of your fingers, till the mixture looks like fine breadcrumbs.

2. Weigh the sugar, making sure there are no lumps. Stir the sugar & chocolate into the floor & butter mixture. Using a fork, mix in the egg, then enough milk to make a stiff mixture.

3. Using 2 tsp, put 16 spoonfuls of cake mixture onto the greased baking tray or trays.
Put them well apart so that they have room to spread. do not smooth the tops of the cakes, leave them rough. Put the baking trays into the oven.

4. Bake the cakes for 15 mins - 400oF/200c

Chocolate chip cookies

4oz/100g butter or margarine
2oz/50g caster sugar
1/2 teaspoon vanilla essence
4oz/100g plain flour
3oz/75g chocolate bits


Lightly grease 2 baking trays. Beat together the butter or margarine.
Sugar & vanilla essence in a mixing bowl until light & fluffy.
Sift the flour & stir it in with the chocolate bits.
Place teaspponfuls of the mixture on the prepared baking trays, spacing
them well as thez spread during cooking.
Bake in a moderately hot oven (375oF/190oC/Gas Mark 5) for 15 - 20 mins.
Leave on the baking tray for 2 mins before transferring to a wire rack
to cool.

Victoria sandwich

4 oz/100g margarine
4oz/100g caster sugar
2 eggs
4 oz/100g self-raising flour
apricot or raspberry jam
icing sugar

Grease two 7 inch/18 cm round shallow cake tins.
Place the softened margarine & caster sugar in a mixing bowl.
Cream them together until light & fluffy.
Beat the eggs together lightly,then add gradually to the creamed
mixture, beating well after each addition.
Sift the flour & fold in with a metal spoon.
Divide the mixture evenly between the 2 prepared tins.
Bake in a moderate oven (350oF/180oC/Gas Mark 4 for about 20 minutes or
until well risen, golden & firm to the touch.
Turn cakes out of the tins & cool on a wire rack.
Spread one cake with jam & place the other on top.
Dust the top of the cake with sifted icing sugar.

You can have double ingredients if you want more than 7 inch cake bin.
I used double with 14 inch cake tin.

Chocolate chip cake

6oz/175g margarine
6oz/175g caster sugar
3 eggs
8oz/225g self-raisin flour
4oz/100g cooking chocolate, chopped

Icing:
4oz/100g margarine
3 tablespoons milk
4oz/100g cooking chocolate, chopped
1lb/450g icing sugar, sifted

Grease & line an 8 inch/20cm deep round cake tin.
Put the margarine & sugar into a mxing bowl & cream until light & fluffy.
Beat the eggs together in a small bowl.
Add the eggs gradually, beating well after each addition.
Sift the flour & fold into the mixture.
Stir in the chopped chocolate.
Spoon the mixture into the prepared cake tin & bake in a moderatelz slow
oven (325oF/170oC/Gas Mark3) for 1 1/4 to 11/2 hours. Turn the cake out
of the tin & cool on a wire rack.

Make the icing:
Put the margarine, milk & chocolate into a heatproof bowl & melt over a
pan of hot water.
Cool slighty then beat in the icing sugar.
Ice the cooled cake.

Tip: You can brush melted butter & chocolate without icing sugar on the cake if you feel icing sugar is too sweet.
My family don't like icing sugar. I used often just butter & chocolate on any cakes. It's popular in Germany. Those receipe, I have is in England. Old one but it's our favorite.
 
Oven Fried Chicken

1/4 cup butter
1/2 cup all purpose flour
1 teaspoon of paprika
1/2 teaspoon of salt
1/2 teaspoon of black pepper
3 to 3 1/2 cut up broiler-fryer chicken


Heat over at 425 degrees melt butter in rectangular pan
mix flour, paprika, salt and papper coat chicken with flour mixture place chicken skin side down in pan

bake uncovered 30 mins.... turn chicken, bake about 30 mins longer or until juice is no longer pink....
 
Corn-Bread and Bacon Stuffed Pork Chops



6 Pork Chops lion or rib...
4 slices of bacon cut into 1/2 inch pieces
1 medium onion chopped (1/2 cup)
1 cup corn bread suffing crumbs
1/2 cup water
1/2 cup shredded cheddar cheese (2 ounces)
1/2 teaspoon of seasoned salt
1/2 teaspoon dried marjoram leaves
1/4 teaspoon pepper

heat oven at 350 degrees
Make a pocket in each pork chops by cutting into side of chop toward the bone....
Cook bacon in 12 inch skillet over med heat.. stir in onion and bell pepper cook 2 to 3 mins stirring until vegetable are crisp tender... stir in stuffing crumbs and water until well mixed stir in cheese sprinkle both sides of pork with seasoned salt and marjoram and pepper, fill pockets with about 1/3 cup corn bread mixture cook pork in same killet over meduim heat turning once place pork in ungreased rectangular poan cover tightly with aluminum foil.. bake for 45 mins.....uncover and bake about 15 more mins longer.
