met hubby for lunch and I had: grilled portabella mushroom, spinach, roasted red pepper and tomato minus the bun <those were ingredients for a sandwich but I had them skip the bread>, some bean salad and some green salad with olive and balsamic dressing.
Money being a little tight, we are making do with what's in the house for a few days. I was out of canned black beans and didn't think about cooking from dried beans as I have them. We had our lentil soup (can was for 2 servings) over a bed of white rice, so I could stretch it for 3 people.
Tonight I will be soaking a 15 bean soup mix and having that tomorrow for lunch.
