Tonight was steak, mushrooms and rice. :)
 
Chunky Chicken dumpling soup with a whole wheat hot pocket pizza supreme and chocolate milk:)
 
I had some smoothered Mexican lasagana along with some house salad for my dinner. I made those from scratch.
 
Sosie, what is mexican lasagna? Seems yum-alicious!
 
Plov rice again...

1 cup of uncooked rice... boil... once done... set it aside

While rice is boiling, add a lot of oil (or butter) to frying pan, add chopped onion (1 whole large). Once the onions are golden brown, add grated carrots (about 2 or 3 large carrots). Once the carrots has oftened up, add a few large chopped mushrooms. Once the mushrooms have shrivelled up, add the rice to the frying pan and fry for two minutes.

Once the rice is done frying, feel free to add any spices and herbs... mix it up and then serve.

Added green onions to this recipe. No chili peppers or lamb this time.

Also had a side of roundeye steak and grilled asparagus to go with it.

And yes... it is how you prepare Chinese fried rice, only difference is that the rice doesn't have a chance to cool down... so it's a bit more "mushy" than the East Asian style... so it gives a different texture.

You can make like this:
INGREDIENTS (Nutrition)
1 1/2 pounds ground turkey
1 bunch green onions, chopped
1 (1.25 ounce) package taco seasoning mix
2 cups water
1 (14.5 ounce) can diced tomatoes, undrained
1 (4 ounce) can diced green chile peppers, undrained
1 (15 ounce) container ricotta cheese
2 eggs
8 (10 inch) flour tortillas
1 (8 ounce) container sour cream
1/4 cup salsa

DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C). Place ground turkey in a large, deep skillet. Cook over medium high heat until evenly brown. Stir in green onions, taco seasoning mix, water, diced tomatoes with juice, and green chiles with juice. Reduce heat to medium.
In a medium bowl, mix together ricotta and eggs. Place 2 tortillas in the bottom of a 9x13 inch pan. Spread 1/4 of the ricotta mixture on tortillas. Spoon 1/4 of the meat mixture over the cheese. Repeat layers until all is used up.
Bake in preheated oven for 20 minutes, or until sauce is bubbly. In a small bowl, mix together sour cream and salsa. Serve in a bowl on the side.

It's easy. Enjoy! :)

I made some Russian Rice last week like this:

1 lb. chicken breast
1 1/2 cup rice
1 tbs. tomato paste
3 cups of chicken stock
2 tbs. oil
1/4 tsp turmeric
1 carrot
1 onion
salt and pepper
 
Tonight was a Michelena fedducini (sp?) alfredo. I also had a side of multigrain nachos and spinach dip. :)

Correction spelling: Fettucine alfredo. :)

Will give it a try. You fry it like I did or you boil them right in the pot?

Yes, it really is! :lol: Pork hocks are the meat from pigs feet. It almost made me hurl when I first found out.

I think they're yummy. I use them to flavor beans like black eyed peas or black beans or soups.

Yep... My family snack on them.

Pickled pork hocks/feet. Lots of Americans and Canadians find it gross, but it's actually a pretty common snack item in eastern Europe and Germany.

Think it's also popular in the South?
 
Not really dinner... but I feel like eating it this morning.

Jasmine rice, drizzled with run-off from round-eye steak... and grilled asparagus.
