Mmmm. Pumpkin cookies. I plan to make some mincement cookies. They're moist and delicious. Maybe a cherry pie. . .
 
Leftovers by the campfire! In MN, at Thanksgiving, this is a first !! :lol:
 
Something with Soyrizo (soy chorizo). It's been a lean (money) weekend and will be for this next week.
 
Grilled cheese, orange juice, and a Mexican chocolate cake roll with pineapple and creme filling. (Orange foods.)
 
Not really dinner time yet, but I am re-heating fried egg sandwiches and buffalo wings. Weird combo, yes :) So turkey-ed out :lol:

All the holiday food is sadly gone. Boo. So, with the last bits of ham and lovely mashed potatoes I made a potato pancake of sorts. It tasted like crispy rounds of ham and potato casserole. (lick!) We served this with collard greens. Oh my goodness, we are rolling in Southern Fried happiness. lol

Adapted a recipe I got online. Basically it was a casserole. Soyrizo, diced onion (1/2 large), mushrooms (1 small can stems & pieces), dried basil and oregano (1 teaspoon each) and I used a little (2 tablespoons) red wine vinaigrette in place of red wine. Brown all together, add to a pot of cooked rotini or pasta of your choice. Add a handful of cheese (daiya for the dairy free). Put into a greased casserole and cover with more cheese. Bake at 425 for about 15 minutes to let cheese melt. Serve with a spinach salad and some good crusty bread.
 
Tonight we will have spaghetti with sauce and I will make garlic bread with a loaf of Puerto Rican bread.
 
I ate a hamburger, split pea soup, a salad, and drank orange juice.
 
Mexican Pizza! The vegetarian sort. It was lovely.
 
I have some quinoa and black bean chili that would just be perfect for tonight.

Eggs, bacon, pancakes, and 1/4 grilled cheese sandwich..

The sandwich was my granddaughter's, but she wanted to trade for part of my pancakes.
 
Chicken, white rice and french cut green beans.
