That looks like a hearty meal for a Winter night, Botti;

Kristina, I sometimes make a chicken and pasta dish too for us. Hubby is very picky about sauce but I love any kinda pasta sauce

Burner on stove died, rice did not turn out and therefore, we had bread and butter with the steak and spinach. Would rather have a Chinese Buffet. Botti, can I come join you?
Ha! Just saw this, and am already home. I thought you just got a new stove?
No, only a new wall oven. I wish she (MIL) would have just gotten the stove/oven in 1 piece like most people, but she spent $1000 on a wall oven and we have an old cook top over some drawers.
Wow. My grandmother had that type of wall oven. She was very proud of it. The latest thing in the 1950's.
Is that the time period for your mother in law cooktop?
Oh, now that sounds wonderful!
This recipe came from an old family friend. The wife of the minister that baptized me in Arkansas.
1 Cup quick grits
4 Cups water
2 teaspoons salt
1 stick butter
1/2 pound grated cheddar cheese
3 eggs, beaten
milk
Cook grits in water with salt. Beat in butter and cheese until smooth and creamy. Add enough milk to the eggs to make 1 cup and add to grits mixture. Pour into a greased 2 1/2 Quart casserole dish. Bake uncovered at 325 F for 45-60 minutes.
Optional: 1 pound of ground sausage. Brown it in a pan, drain well and add to the grits mixture before putting into the casserole. I used sweet turkey Italian sausage. Removed the sausage from the casings.
The dish will be runny and loose but is very good. Serve with a vegetable and a salad and you've got a great meal. The recipe should feed 8 people with small to normal appetites. My family, it feeds 5, but daughter doesn't really like it much.
