Just before I moved back to Ohio there was a guy in TN about 10 miles from me that started an emu farm. It was a very successful business selling the emu for food.

My grandson eats gator tail. Basically, he'll try anything at least once. His brother sticks with mac and cheese, and chicken fingers.I've never had horse or strange meats, but I've tried rabbit, quail, and gator. All of these were at a Brazilian Churrascaria (bbq) restaurant. The gator was not my flavor.
Westerners eat duck. It's served in most Asian restaurants. I'll have duck once in a while. My sister-in-law in MI served duck for Thanksgiving.Duck is pretty popular in asian cuisine, but I think Westerners will probably avoid it like the plague. I'm not particularly fond of eating it either.

We had duck for christmas dinner last year. And just down the block from where I live, one can buy various assortments of meats from rabbit to venison to caribou to duck to goose ...the list goes on. Game meats is becoming more popular with those wanting to avoid industrial farm meats.
