Episode 407

Matt confronts Ben in the living area. The girls don’t know why Matt wants to be part of their team, and they already want him gone.

The next day, Matt lines up with the Red team. Ben tells Chef that the men’s team won’t be missing Matt. Chef has cooked three dishes for the teams. He wants to see if they know what the missing ingredient is from each. Everyone dives in, but no one can figure out that he prepared them without a meat product. He only used soy-based replacements. Chef Ramsay is stunned that none of them were able to use their palettes to find the fake meat.

The teams move to the dinning area for a blind taste test. Each must identify three items and the team with the most will win. The women are running away with the competition, five to one. The final competitors are the rivals, Matt and Ben. Ramsay changes the challenge. He has prepared a dish with ten ingredients, and they must alternate naming all ingredients. Matt matches Ben, ingredient for ingredient. Yet Ben falters and Matt wins the challenge for the Red team. Chef sends the Blue team off to clean the dorm rooms. The women and Matt go get massages.

During the cleaning, Ben has to take ice teas to the Red team. He is furious that he has to serve Matt.

The teams head into the dinner service, and Matt is the focus of everyone’s attention. Chef Ramsay calls the teams around before the opening and challenges the Blue team to step it up. He also announces that there won’t be anymore theme nights at Hell’s Kitchen. It’s time for Jean-Phillipe to let the customers in.

The seventh dinner service begins, and the teams feel like they have a lot to prove. Rosann swears that she will stay focused. Yet from the start, she fumbles on the scallops. Rosann is still able to get the order out before Bobby and Louross can get theirs completed.

The Red team starts their entrée orders. Jen gets upset and shuts down when Chef snaps at her for trying to take control of the kitchen. On the Blue team, Louross impresses Chef Ramsay with a great-looking salad.

Rosann continues to fumble the scallop station. Chef calls the Red team around. He tells Jen to step up, and yells at Rosann over the quality of her scallops. The Red kitchen is losing momentum.

Chef Ramsay moves on to attack the men, accusing them of falling apart and not communicating. When Ben tells Chef that he isn’t used to this system, Chef explodes. He says that Ben always has a weak excuse for his poor work.

Two hours in and Chef Ramsay is losing patience with the Blue kitchen because they can’t work together. In the Red kitchen, Ramsay compliments Christina on the quality of her beef orders. By then, more than half of Red tables have received their entrees. The customers on the Blue side have yet to receive any food.

Chef preps a dish of risotto cooked by Matt. Chef compliments him and Matt is thrilled.

Chef Ramsay busts Ben on not having any of the entrees prepared. Ben makes the mistake of letting Chef hear that there is no lamb ready. The Blue team is in shambles and their service is embarrassing.

Rosann slips up serving raw meat. Then Jen gets on Chef’s bad side by mouthing off to him while he gives orders. Rosann isn’t sure that she should stay after this round of Hell’s Kitchen.

Service stalls in both kitchens and orders are being returned to the Blue team. Matt is thoroughly amused when he hears Chef yelling at Ben. Chef Ramsay has had enough of the poor service and he shuts down both kitchens.

Afterwards, Chef calls the teams overconfident, lazy, slow and pathetic. He surprises everyone by announcing that Matt was the star of both kitchens. The losers are the Blue team. He sends them all back to the dorms and demands that the men’s team individually nominate one person.

Ben tries to get the guys to each nominate themselves. When Louross refuses, Ben has to switch gears. He then goes after Petrozza to nominate Louross, but Petrozza doesn’t know what to do.

Back in the dinning room, Louross nominates Ben. Ben nominates Louross, and Bobby nominates Petrozza. Petrozza nominates… himself! Chef Ramsay tells Petrozza that he is by far the most mature and gracious person on the Blue team. Chef makes his choice. Ben will leave Hell’s Kitchen. Matt couldn’t be happier.

Ramsay wants the chefs to forget everything and move on. It’s time for the Blue team to shine. Since the teams are now unbalanced with three men and five women, Chef Ramsay announces to the Red team that someone will need to go to the Blue team.

Recap (5-20-08)

Episode 408

The girls begin trying to choose which one of them will move to the blue team to balance the teams. Corey tries to persuade Jen to move to the other team.

The next morning, Ramsay asks for the volunteer. Jen speaks up and steps forward. The men are curious to see how she’ll perform on their side. The women are happy to see her go.

After the shift, Ramsay tells them the day’s challenge. There are twenty items in the kitchen and each of them will have to create a dish. Four dishes per team, and all twenty items must be represented only once in the dishes. The red team jumps in, making a list of the ingredients and staying organized. Jen begins just taking what she wants and rubbing the blue team the wrong way.

During the preparation, Matt slices off the tip of his finger. Ramsay shuffles him off to a medic, and the women press on to finish all their dishes. Ramsay returns to the red team with an important question… where did the tip of Matt’s finger go? The red team can’t find it and are worried that it may have been cooked in the pancetta. The red team moves on, showing their strong communication.

In the blue kitchen, communication is failing again. The chefs are doubling up items and Sous Chef Scott warns them of their error.

Matt rejoins the line and does his best to support his team.

The red team manages to get their dishes to the window, but the blue team struggles with presentation. Christina and Petrozza set up first, and their dishes are so good, Ramsay awards them both one point. Next up are Matt and Jen, and Jen is rewarded the point. Corey and Bobby come to the table. Corey’s dish is a plain, but Bobby’s dish doesn’t meet Ramsay’s standards.

Finally, Rosann and Louross. Chef asks Louross how many he used, but Louross can’t lie as he was asked to by Jen. He tells Ramsay the truth and the blue team is one item short. The blue team’s punishment is to do all the laundry in Hell’s Kitchen by hand. The red team is treated to an exclusive photo shoot.

Louross takes the challenge loss hard, and Jen takes aim at her depressed team mate. She continues to call Louross names under her breath, and Louross is not going to let that happen.

Before dinner service, the blue team is having issues getting along with Jen, while the red team is all smiles and working well together. Chef Ramsay calls the teams together. He tells the chefs that tonight in Hell’s Kitchen, they will be visited by two food critics and that will help determine the winner.

The dinners have arrived in Hell’s Kitchen, and so have the critics. The critics make sure to order duplicate items from the red and blue kitchens so that they can compare them. Red team is able to get their first dishes to the critics, and they seem pleased. Blue team gets their appetizers up, and again both Ramsay and the critics are pleased.

Matt takes heat from Ramsay because he cut his fillets to inconsistent sizes. But in the blue kitchen, Petrozza is at the receiving end of Ramsay’s wrath for cutting open his beef too soon. Louross tries to keep Petrozza rolling, and Jen steps up to manage the kitchen. Next door, Christina stumbles on her salmon and has her rhythm thrown off. The critics aren’t pleased with Christina’s salmon, and prefer Louross’s instead.

The red team begins to fall behind and their customers are waiting. Rosann can’t keep organized and is burning her side dishes. And to top it off, she tells Ramsay they’re going to be short gnocchi on one of the orders. While the red team flounders, the blue team shockingly surges ahead.

Matt begins to crumble under the pressure and is ruining his beef dishes. Ramsay throws the red chefs out of their kitchen. Their night is over, and Matt takes the loss personally. The stress hits Corey too; she’s tired of pulling her weight with no victory. Ramsay divides the blue kitchen to help save the red kitchen.

After service, Ramsay reads the critic comments, and they are what the teams expected. The blue team shined, while the red team drowned. Chef Ramsay tells Corey she is the best of the worst and she needs to choose who will stand before Ramsay tonight.

In the dorms, Christina, Rosann and Matt all defend themselves to Corey, but Corey considers sending all three up for elimination.

During eliminations, Corey nominates Matt and Rosann. But Ramsay wants to see Christina also. All three of them are up for elimination tonight, and defending themselves before Ramsay. Ramsay sends Rosann back to the line, leaving Christina and Matt. Matt admits he is disappointed with his own performance, but still has fight in him. Ramsay then, surprisingly, sends Rosann home. Rosann hands off her jacket and heads home.

Ramsay tells Christina she has been warned, and that Matt is on the fence and leaning towards failure.

Louross is screwing up the meat station and it’s taking the Blue team down. Chef Ramsay threatens to shut down the Blue kitchen if one more beef dish is returned.

Matt continues to mess up even in the vegetable station. Matt is furious, and Corey wants Matt to get his head together. Corey wants Matt out of the way.

Louross delivers a great beef dish, but it’s too late -- the customers have left. Chef Ramsay is furious.

Tonight, both teams are able to finish service.

Chef Ramsay brings the chefs together and tells them the menus were very close. Each team fell apart during certain dishes. Chef singles out Matt and Louross for their poor service. Tonight, the losing team is the Blue team.

Petrozza, while sloppy, is the best of the worst. He must nominate his peers for elimination. Petrozza puts Louross up because he lacks the skills to compete. Then he names Jen, because of her attitude. Chef asks Petrozza who should be sent home and it will be Petrozza’s call. Shockingly, Petrozza says Louross. Chef Ramsay agrees, and Louross turns in his jacket.

However, Chef isn’t done. He calls Matt forward.

Chef Ramsay tells them to take off their jackets. He sends Jen back to the Red team, and sends Matt back to the Blue team. Everyone is shocked.
