Probably...since we'll have company for about month and half so she and I can do all fun baking together! Not sure on what kind of cookies we'll be baking. Maybe 2 or 3 different kind of our favorite in this household. :thumb: Probably PB, Chocolate chip with M & M on top and sugar cookies (cut out with Christmas theme) and frost them.

I will be also make pretzels dipped in chocolate which DHB really love the most and bugles with PB and then dipped half in chocolate. Maybe marshmallow dipped in chocolate but not sure yet.

pretzels dip in chocolate mmmm....sounds good...I'm not sure if RR or my children likes them, will find out LOL

I did in both chocolate and white chocolate...DHB said regular chocoalte taste better than white one. So my other good friend ate all the white one! :giggle:

I don't like them. My son does. When he see it, his eye go like this :eek3: and begged for some!

1 cup mixed fruit
1/2 cup chopped nuts
1 1/2 cups rice bubbles
few drops of Vanilla essence
240 grams copha (8 ozs)

Method-

1. Mix all dry ingredients and vanilla.
2. Melt copha, add to dry ingredients, mix well.
3. Press in flat tin, then cut into squares when firm.
4. Keep in cool place.

This is a rich tasting slices and it is very yummy.

I probably will bake some before the 11th of December, when my father comes to visit us here in Utah.

Here are my traditionals:
1) butter cookies (Bretagne style)
2) pignolle cookies (pinenuts with marzipan)
3) pizzelles (thin anise-flavoured wafers)
4) coconut macaroons

Maybe I will try some new recipes this year. We'll see.

Practically Edible

Copha

Copha is solidified coconut oil that will stay solid at room temperature. It comes in blocks or a cube wrapped like butter or dripping. It is white, but goes clear when melted.

It is basically coconut butter that has been hydrogenated to make it even more stable until deliberately melted, and to make it more resistant to going rancid (it's treated with a hydrogen gas that changes unsaturated fat bonds to saturated ones).

Copha is the brand name in Australia. Kremelta is the New Zealand version, and Palmin is the German version, both of which are the same as Copha except for the brand name.

There you go, I hope this help to explain what is copha. I am surprise that USA don't have it there.

I didn't know what copha was until I looked it up. It seems like the Australian version of like Crisco or something, do you know?

It sounds like Crisco in the US, except that Crisco has no flavouring. I wonder if Copha has a coconut flavour to it? It said a substitue for it would be shortening mixed with coconut milk?

My late mother used to bake a whole tin full of Christmas cookies and give this to me as an early Christmas present every year. They were absolutely delicious and something I *always* looked forward to receiving. She made several varieties of cookies such as chocolate chip, peanut butter, suger cookies, M&Ms, gingerbread, oatmeal, oatmeal raisin (or oatmeal chocolate chip) and a powdered sugar cookie I can't remember the name of that looked like a crescent shape. It has been 2 years since my mother passed away, but I still continue her tradition of making Christmas cookies every year and giving them to family and friends.
