I want his opinon about sushi in NY/NJ areas. I don't know where in America sushi comes close the way they make it in Japan. You know Japanese rice is different than American rice do you?

You would need to find one that have chefs trained in Japan...found one in Maine and the quality is so much better....also learned a lot from him...
