Peanut Butter

Prep time: 15 mins Cook time: 45 mins Total time: 1 hour
Serves: 4 to 6

The recipe for the stew was adapted from a version from Sierra Leone, Africa.
Ingredients
2 sweet potatoes, peeled and cubed
2 tablespoons vegetable oil
3 garlic cloves, minced or pressed
3 tablespoons grated fresh ginger root
2 tablespoons ground coriander
½ teaspoon cayenne (or to taste)
4 cups chopped onions
2 tomatoes, chopped
4 cups peeled and cubed eggplant
½ cup vegetable stock or water
1 cup chopped zucchini or yellow summer squash
2 green peppers, coarsely chopped
2 cups tomato juice
½ cup peanut butter
Instructions
Steam or boil the sweet potato cubes until just tender.
Meanwhile, sauté the garlic, ginger, and spices in oil for one minute.
Add the onions and cook until they begin to soften.
Add the tomatoes, eggplant and a small amount of vegetable stock or water and simmer for 10 minutes.
Add the zucchini and peppers and continue to simmer until all of the vegetables are tender, about 20 minutes.
Drain the sweet potatoes and add them to the stew along with the tomato juice and peanut butter. Stir well.
Simmer on very low heat for 5 to 10 minutes, stirring occasionally to prevent sticking.
Serve on rice, couscous or millet.
Notes
At Moosewood we garnish this stew with optional hard-boiled egg halves, and pineapple and banana slices.
Variations popular at Moosewood:
Substitute 3 cups of chopped green cabbage, and 1½ to 2 cups chopped okra for the eggplant, and add 1 cup of apple or apricot juice and some chopped fresh cilantro leaf.

are you planning to lose more weight?? did you ever eat some junk or NONE? :shock:

No, I'm just maintaining my current weight. And, yes, I do have junk food, but not as often as I used to. Every once in a while I go to Mike's Pastry and pick up some Canolli or Macaroon cookies just not as often as I used to.

Lately, I've been trying different types of apples(which can be served with Peanut butter BTW). I've found Fiji type to be very good so that's my next snack.

The other day, someone left a box of Girl Scout Peanut Butter cookies in the kitchen. I resisted, but it was a struggle. LOL. I used to eat boxes of that stuff.
 
I've always liked Jiff, but I picked up a healthier peanut butter, Naturally More, it's not bad. But even better though is almond butter, ever try that? it's awesome!!
 
Sanitarium, from NZ, and i like crunchy , sometimes smooth, , smooths is better for cooking.
 
Off to the kitchen to make me a peanut butter and banana sandwich.....yummy!

keep an eye on weight prices too for small and large jars. It seems to flip flop month to month. sometimes its cheaper to get large jar. other times its cheaper to get small jar. pretty silly from wegmans.
 
Jif and Skippy. I eat PB every day. I have Skippy natural in my pantry right now.
 
i think rashberry is better, but depending on the quality of the fruits or jam making technigue they use,, (and I dont even know whats what, but yeah better fruit may be more even , like not so rough i suppose, the flavour-wise..hmm but put this way strawberry is bright rashberry is darker and probably depends on the PB too?!
 
i like either strawberry or banana with pb sandwich. raspberry with pb on the ritz cracker yummy! I am not a fan of grape jelly. if there are out then grape jelly is the last choice haha
 
almond butter and apple butter sandwich on whole grain bread...one of my favorites. I tend to avoid most fruit spreads as they have added sugar in them.
 
I thought I loved peanut butter, but now that I read this question, I think I just really really like peanut butter flavored things (icing, cookies, oreos, etc). Any smooth brand works for this! :)

I plan to make homemade pb cookies for my girl and hub. But i keep postponing lol. I want with maple cookies first then pb cookies heheh. Next week my friend host a pinrester (sp?). I probably try pb cookies something different. :hmm:

urgh thsnls for reminding me i havent got around making the maple cookies, got the maple syrup a geniuine one, damn they're expensive better be good!
 
Jeez....totally have forgotton about "Apple Butter"....was my grandfather's favorite...and we ate a lot of it when I was growing up....I love it too....Combine apple butter & peanut butter, along with a banana...yummmmmmm....just wrote it down on my grocery list for next week!
 
PB and Maple Syrup is Heaven!

I prefer grape jelly if I add jelly. In the mornings I eat granola bars with PB on them.
