My dogs have taken it upon themselves to destruct their stuffed toys. They seem to be picking on one thing in particular.

That's funny, I had a dog that always did the same thing. Right for the eyeballs! I started cutting them off before I gave them to her so she couldn't swallow them.

Parts that "stand out" on stuffies or other toys are often the ones that get destroyed - eyes, noses, etc.
