Mexican red rice? care to share the recipe?
I do like Mexican but it would be depend what's on the menu.
I love Enchanilla (sp) but hubby isn't crazy over it. I like mix with cheese and chicken.
Hubby's fave is Fajita.
My husband's favorite is Fajita. It seem most men love Fajita.
Sure, there are many ways to make red rice. If you want to add vegetable to red rice, a small amount of corn, sweet pea or carrot would be best. Or you can combine them together if you want to. I usually throw in any pepper (red, green, orange, or yellow). It's just optional.
Some people have preference-short grain or long grain. I like Jasmine rice, but it won't be authentic Mexican flavor. If you want authentic Mexican, go for long grain white rice. The secret is rinse rice first with water, then leave them in water for one hour. Dry them later.
I know Chipolte use a bay leaf to make rice, 'cause I almost ate it! Bay leaf is not edible, so don't eat it. You can use bay leaf to make any rice -regular, red or green. One bay leaf is sufficient for a whole family's meal. Ok, about herbs, you may want to shop at the Mexican grocery to find a few spices options like achiote powder or chili powder. If you don't have them, you can use cumin instead.
There are options to use oils- You can use peanut oil, canola oil or olive oil. Those are the common ones they use to make any rice.
