Campbell's® Cheesy Chicken & Rice Casserole

1 can (10 3/4 oz.) Campbell's® Condensed Cream of Chicken Soup (regular or 98% Fat Free)

1 1/3 cups water

3/4 cup uncooked regular long-grain white rice

2 cups fresh or frozen vegetables

1/2 tsp. onion powder

4 skinless, boneless chicken breasts

1/2 cup shredded Cheddar cheese

Cooking Instructions:

1. Stir the soup, water, rice, vegetables and onion powder in a 12 x 8” shallow baking dish.

2. Top with chicken. Season chicken as desired. Cover.

3. Bake at 375°F. for 45 min. or until done. Top with cheese.

4. TIP: Italian: In place of onion powder, use 1 tsp. Italian seasoning. Substitute 1/3 cup shredded Parmesan for Cheddar "or" Mexican: In place of onion powder, use 1 tsp. chili powder. Substitute Mexican cheese blend for Cheddar.

you can do this either way italian or mexican style. My brother ate like a damn horse when I cook anything! lol:hmm::giggle:

I have "Campbell's®" cookery book here with me.. I bought it when I was in USA last year... I love Campbell's® soup which is good useful recipes. I ordered a lot of Campbell's® soups from British online shop.

I think I did make that before. It is okay. I may make it again but I am not using the oven for rest of the summer till September. TOOO HOT! I do have a toaster oven, that's what I am using.

:( I cannot eat that.. cuz i am on diet  so untill few pounds lost then I will make that and eat small amount :D :D

Those recipe are not fat but you can use low fat cheese or without cheese, that's all.

1 can (10 3/4 oz.) Campbell's® Condensed Cream of Chicken Soup (regular or 98% Fat Free) have low calories/fat.

1 1/3 cups water - no fat.

3/4 cup uncooked regular long-grain white rice - no fat.

2 cups fresh or frozen vegetables - very little fat to zero

1/2 tsp. onion powder - no fat but I would use fresh chopped onion.

4 skinless, boneless chicken breasts - very low fat and calories

1/2 cup shredded Cheddar cheese - should be up to 30% fat, no more...

Those recipes have high protein... :thumb: that's why I am going to cook it on Thursday because I look for health and low fat.

I don't bake that cassole often... just boil the rice. Grill chicken without olive oil or fry chicken with olive oil until they are cook and remove chicken and leave on the plate... Add chopped onion to fry until they are soft then add vegetable until it done... then add soup until they are hot then add chicken in that frying pan... If you want to have cheese then grill to melt cheese... (My family are not crazy of melt cheese - I often cook without cheese.) Prepare rice on each plate... chicken on that rice... done...
