Here is mine:
I got 2 large Zucchini from my friend's garden last Saturday. We used alot of Zucchini receipes. I'll add more later when I finish translate into English.
Zucchini-Risotto for 4 persons
1 onion, chopped
150g red pepper, chopped
450g zucchini, chopped
1 tablespoon cooking oil
200g rice
1/2 teaspoon Kurkuma (Yellow spice)
400ml vegetable or beef or chicken stock, (vegetable is better)
salt, pepper
Oil on the frying pan.
Fry onions until they are soft, then add red pepper, rice & kurkuma then
add stock to boil until rice is ready. (around 8 to 10 minutes boil), then
add zucchini to mix with, then 5 to 7 minutes cooking. salt & pepper to
taste.
Serve with Tomatoes sauce & grated cheese.
