Any Zucchini receipes?

Here is mine:
I got 2 large Zucchini from my friend's garden last Saturday. We used alot of Zucchini receipes. I'll add more later when I finish translate into English.


Zucchini-Risotto for 4 persons

1 onion, chopped
150g red pepper, chopped
450g zucchini, chopped
1 tablespoon cooking oil
200g rice
1/2 teaspoon Kurkuma (Yellow spice)
400ml vegetable or beef or chicken stock, (vegetable is better)
salt, pepper

Oil on the frying pan.
Fry onions until they are soft, then add red pepper, rice & kurkuma then
add stock to boil until rice is ready. (around 8 to 10 minutes boil), then
add zucchini to mix with, then 5 to 7 minutes cooking. salt & pepper to
taste.

Serve with Tomatoes sauce & grated cheese.

Zucchini-Cheese-Ham-Mousse for 4 persons

150g zucchini, chopped finely
cooking oil
150g ham, chopped finely
200g double cream cheese
50ml Creme fraiche
pepper

Fry zucchini (not too soft), then leave it until they are cool.
Mix double cream cheese, creme fraiche & 1/4 of 150g ham with
electricity blender to puree.
Add zucchini & overleft ham into cream cheese mixture. pepper to taste.
Leave them in the fridge for 2 hours or more.
Spread the mousse on the cool butter toast.

i will make this one.. sound good to me.. yummy!!! i love cook! thanks! :)
 
I has plenty yellow & green Zucchini from my friends. I baked Zucchini cake today for our dinner time to match salt potatoes. I do that every year when I receive many Zucchini during season time.

Zucchini cake

750g thick grated Zucchini (use it grated machine)
1 chopped onion
1 chopped garlic
200g chopped ham
200g grated cheese
5 tablespoon of fresh chives
5 eggs
50g bread crumble
pepper, salt
muskat
15g butter or margarine

Mix all of Ingredients together in once.
Put the mixture on the grease bake tin & spread them then bake at fan oven for 30 to 35 minutes at 150oC.


You can eat hot or cold Zucchini cake whatever you like. I like both cold & hot cake.

Zucchini with coated bread crumb.

Sliced Zucchini
Garlic salt & pepper
1 egg
50g bread crumble
50g butter

1. Coat clean & wash well Zucchini with egg & seasoning then bread crumble.
2. Fry them with butter.

Serve with salt potatoes or rolls and Remouladen sauce.

Zucchini Gulasch

My co-worker treated her homemade Zucchini Gulasch for the lunch time today. It taste real super. I asked her for the recipe then I'll make this weekends.

Here:

Zucchini Gulasch

750g chopped Zucchini
1 can tomatoes
1 thin chopped onion
1 thin chopped garlic
salt, pepper, Cheyenne pepper, red pepper powder, oregano,
1 lemon


Squeeze the lemon juice & sprinkle the lemon juice on chopped Zucchini & leave them few minutes.
Fry chopped onion & garlic until they are soft but not brown then add Zucchini.
Fry them until they are soften then add can tomatoes, seasoning to boil until they are ready.

Serve with salt potatoes.
